A slow cooker breakfast casserole is a practical brunch dish. You layer hash browns, sausage and cheese, pour over an egg mixture, and the casserole cooks gently while you do other things.

The key with eggs in a slow cooker is moderation. They can turn rubbery or brown at the edges if cooked too long, so check the casserole early and rely on a thermometer to confirm it is cooked through.

Prep the sausage and vegetables the day before if you like, and keep the pieces separate in the refrigerator until you are ready to assemble.

Equipment

  • 6-quart oval slow cooker
  • Large skillet
  • Instant-read thermometer

Instructions

  1. Step 1: Prepare the slow cooker

Grease the inside of a 6-quart oval slow cooker generously with butter or cooking spray, or use a slow cooker liner.

  2. Step 2: Cook the sausage

Brown the sausage with the onion and bell pepper in a large skillet over medium-high heat for 6 to 8 minutes, breaking the sausage into crumbles, until no pink remains. Drain off the fat.

  3. Step 3: Layer

Spread one third of the hash browns across the bottom of the slow cooker. Top with one third of the sausage mixture and one third of the cheese. Repeat the layers twice more.

  4. Step 4: Add the eggs

Whisk the eggs, milk, salt, pepper, garlic powder and mustard until well combined. Pour evenly over the layers and press down gently so the hash browns are mostly moistened.

  5. Step 5: Cook

Cover and cook on Low for 4 to 5 hours or on High for 2 to 3 hours. Do not lift the lid until near the end. Egg dishes cook unevenly in slow cookers, and the edges can brown or turn rubbery if cooked too long.

  6. Step 6: Check doneness

The casserole is done when the center is set with no liquid egg, a knife inserted in the center comes out clean, and an instant-read thermometer reads at least 160°F (71°C). If it is not done, cook another 20 to 30 minutes and check again.

  7. Step 7: Rest and serve

Turn off the slow cooker, remove the lid, and let the casserole stand 10 minutes so it sets further. Scoop out portions and top with green onions.

Food safety

  • Egg dishes should reach 160°F (71°C) in the center. Check with a thermometer; do not rely on time or appearance alone.
  • Cook sausage until no pink remains and it reaches 160°F (71°C).
  • Keep raw egg mixture refrigerated until you are ready to cook, and do not leave an assembled casserole sitting at room temperature.

Serving suggestions

  • Serve with fresh fruit or a green salad.
  • Offer hot sauce, salsa or sour cream at the table.
  • Pair with toast or warm biscuits for a bigger brunch.

Tips for success

  • Cook the sausage and chop the vegetables ahead of time, and refrigerate the pieces separately. Assemble in the slow cooker just before cooking.
  • Do not assemble the casserole and leave it sitting in the slow cooker overnight before turning it on.
  • Check early the first time. Slow cookers that run hot can overcook the edges.
  • Do not keep the casserole on Warm for hours. It dries out and the eggs become rubbery.
